Chickpea and Cucumber Salad

Ingredients:

15 ounce can of chickpeas (drained and rinsed)

2 cups chopped cucumber

1 cup cherry tomatoes cut in half

1 small red onion chopped

a small avocado cut into 1 inch cubes

juice from a half of lemon

salt and pepper to taste

Directions:

Add all ingredients from above into a large bowl and toss well.

Dressing Ingredients:

1/4 cup Bittersweet Herb Farm Lemon Pepper Oil

2 Tbsp. Bittersweet Herb Farm Balsamic Vinegar with Maple Syrup

2 Tbsp. vegan mayonnaise (or regular mayonnaise)

salt and pepper to taste

Directions: 

Whisk all ingredients together and pour slowly over your salad mixing frequently to get just the amount you desire.  Enjoy
