Ingredients:
Fresh Basil
1 cup Ricotta Cheese
1 can of Northern White Beans drained and rinsed.
zest from 1/2 of a lemon
1Tbsp. Chili Pepper with Garlic Oil
Garlic Oil Pesto:
2 Tbsp Garlic with Rosemary Oil
1 bunch of fresh basil
2 cups fresh spinach
2 Tbsp crushed cashews
2 Tbsp. grated parmesan cheese.
Directions:
Start by making the pesto. pulse the spinach, basil, cashews, Garlic Oil, and parmesan cheese in a food processor until well blended.
Top the beans with a few dollops of Ricotta cheese and dollops of pesto. Drizzle the Chili Pepper Oil over the top with the zest of lemon. You can garnish with fresh basil also.
If you want you can use all basil for your pesto, or all spinach. I didn't have enough basil so I used a combination, which was really good.
