Ingredients:
2 Tbsp. olive oil
1/4 cup chopped onion
1/4 cup shredded carrots
1/4 cup corn
1 heaping Tbsp. Bittersweet Herb Farm Southwest Picante Seasoning
1 can refried beans
1/4 cup cornmeal
2 Tbsp. Salsa Verde
1/4 cup ground oat flour
1/2 cup Zesty Garlic Aioli (Click here for recipe)
salt to taste
Directions:
In a medium sized skillet add olive oil and Bittersweet Herb Farm Southwest Picante Seasoning. Cook for about 1-2 minutes and then add onion, carrots and corn. Sauté vegetables for about 3-5 minutes. In a large bowl add refried beans, sautéed vegetables, oat flour, cornmeal, salt and salsa Verde. Mix well and form into patties. Heat a large skillet with a little bit of olive oil on it and cook patties browning on both sides until desired crunchiness.
Serve with your favorite bread topped with Zesty Garlic Aioli. Enjoy!
