Stretching Your Rice and Beans

First make your Rice

Ingredients:

1 Cup Rice

2 Cups Water

2 Tbsp Bittersweet Herb Farm Zesty Garlic Seasoning.

Directions:

Cook rice according to package directions adding  Bittersweet Herb Farm Zesty Garlic Seasoning 

Stage 1: Rice and Beans

Ingredients:

4 Cups cooked rice from stage 1

1 can chickpeas (reserve Aquafaba  (juice))

1 Tbsp Bittersweet Herb Farm Chili Pepper with Garlic Oil 

2 Tbsp Olive Oil

1 Tbsp Tamari or salt to taste

1 medium chopped onion

1 Heaping Tbsp Bittersweet Herb Farm Spices of India Seasoning

Directions:

In a medium skillet add Olive Oil, Bittersweet Herb Farm Chili Pepper with Garlic Oil and Tbsp Bittersweet Herb Farm Spices of India Seasoning.  Stir together and add onion saute until onions are tender.  

Add Chickpeas stir until well coated.  Add rice and stir.  You may need to add a couple Tbsp of water.  Heat until desired temperature.

Serve and Enjoy!

Stage 2: Rice, Bean and Potato Wrap

Ingredients:

Leftover Rice and Beans from Stage 1

1 Tbsp  Bittersweet Herb Farm Chili Pepper with Garlic Oil 

2 Tbsp Olive Oil

Tbsp Bittersweet Herb Farm Spices of India Seasoning

1 Tbsp Tamari or salt to taste

3 large potatoes boiled and cubed (reserve potato water for future use)

1 small onion chopped

1/4 Cup water

4-6 Flour Tortillas

Directions:

Boil potatoes until tender but still firm.  Drain and cool.  Cube into 1/2 inch cubes

Heat Bittersweet Herb Farm Chili Pepper with Garlic Oil , 2 Tbsp Olive Oil and Tbsp Bittersweet Herb Farm Spices of India Seasoning in a large skillet mixing all the seasonings with the oil.  Add Onion and saute until tender.  Add potatoes and saute until desired tenderness (We like them a little Crunchy).

Add Rice and Beans from stage 1 and the 1/4 cup water. Stir well, cover and heat stirring occasionally until desired temperature is reached.

While mixture above is heating, in a medium sized pan heat tortillas

Put about a 1/4 cup of mixture into your wrap and enjoy!!!

Stage 3: Rice, Bean and Potato Soup

 Ingredients:

Rice, Beans and Potatoes leftover from stage 2

2-3 Cups Vegetable Stock

Aquafaba from chickpeas

1 can coconut milk

1 Heaping Tbsp  Bittersweet Herb Farm Spices of India Seasoning

Directions:

In a large pot, Combine all of the above ingredients and let simmer for 1/2 hour.  Serve and enjoy!

Stage 4 Mexican Soup:

Ingredients:

Leftover rice and beans from Stage 1

2 Tbsp of Bittersweet Herb Farm Mexican Seasoning

1 8 oz can of crushed tomatoes

4 Cups vegetable broth

4-5 Tbsp Olive oil (or canola)

1-2 Tbsp Bittersweet Herb Farm Chili Pepper with Garlic oil

 Tamari (or salt) to taste

4 Corn tortillas cut into strips.

Options:Corn, carrots, potatoes or any left over vegetable you have.  You can also add shredded or cubed  cooked chicken.  

 Directions:

 In a large pot make your vegetable broth.  Add Bittersweet Herb Farm Mexican Seasoning.  Let simmer for 10-15 minutes to re-hydrate vegetables.  

In a skillet on medium high heat add Olive Oil (or canola) and Bittersweet Herb Farm Chili Pepper with Garlic oil.  When hot but not smoking add your tortillas and fry until crispy turning frequently,  Drain on paper towel.  Sprinkle with salt.

Now add leftover rice and beans to your vegetable broth with the Bittersweet Herb Farm Mexican Seasoning.  Add crushed tomatoes and simmer until heated through.  

Serve in bowls topped with crispy tortillas.  You can add cheese if you please.
